    • Korean Seafood Stir-fry

      I came across this wonderful Korean paste called Gochujang  which translates to “Hot Pepper Paste” in my local Asian food store, I bought it and couldn’t find anything to make with it so I searched for some recipes and I came up with this one. As I have a slight obsession with seafood I added prawns and squid,  but it’s  not only good with  seafood it adds a depth of flavour to any meat stir-fry. Have a search for it you won’t be  disappointed, the taste is  hot and spicy but with an amazing smoky flavour as well, and the best part is it takes very little effort to create a delicious meal in less than 20 minutes, and I just love fast cooking!

      Serves 2

      Ingredients

      150g raw king prawns

      150g squid,

      1 tbsp. vegetable oil

      1 onion, peeled,  halved and sliced

      1 carrot, peeled and cut on the diagonal

      4 spring onions, sliced

      1 heaped tsp. sugar

      1 tbsp. oyster sauce

      2 tbsp. Korean gochujang paste

      ½ tsp. chilli flakes (optional)

      3 tbsp. water

      1 tsp. sesame seeds

      Steamed Rice to serve

      So I wanted to make something a little bit fun for the kids at Easter and I came up with these, the are great fun to do and my kids are now having a discussion which one to eat first! I made my cake pops in my MPL Home Cake Pop Maker which I love as it takes all the effort out of making them, they literally take 4 minutes to bake!

       

      Ingredients

       

      125g softened butter

      125g caster sugar

      2 eggs, lightly beaten

      125g self raising flour

      1-2tbsp. milk

      Cake pop sticks

      White candy buttons (PME are good)

      Yellow candy buttons

      Sprinkles for beaks, wings and bunny noses

      Ready made icing for ears

      Food colouring for eyes and mouth

      Icing sugar

    • Pork Satay | Kid-Friendly Meat on a Stick

      This looks wicked, my kids love any form of meat on a stick, I will be making this for them without a doubt. Great recipe!

      Pork Satay with Coconut-Peanut Dipping Sauce

      serves two to four; six to eight as an appetizer

      1/4 cup natural peanut butter, smooth or creamy, plus another 1/4 cup
      1 tablespoon vegetable oil
      2 tablespoons fresh lime juice
      2 tablespoons soy sauce
      4 cloves garlic, minced
      1 tablespoon honey
      2 tablespoon finely chopped cilantro
      2 teaspoons yellow curry powder
      1/4 teaspoon red pepper flakes (optional)
      1 1/2 cups coconut milk

      1 1/4 to 1 1/2 pounds pork tenderloin, trimmed
      1 teaspoon freshly peeled and grated ginger
      1/2 teaspoon toasted sesame oil

      Extras:
      6- to 8-inch skewers

      Whisk together 1/4 cup of the peanut butter, vegetable oil, lime juice, and soy sauce until smooth. Stir in the garlic, honey, cilantro, curry powder, and red pepper flakes until well combined. Add coconut milk and stir until incorporated. Measure out 1/2 cup of marinade and set aside.

    • Spicy Szechuan Chilli Chicken

      I absolutely love Asian cooking and trawl the Asian supermarkets for weird and wonderful ingredients; one of the best I have come across is  called Raan Thai, and they offer a fantastic delivery service!

      This recipe is from the Szechuan region of china and is often spicier than any other region, they typically use small dried chillies, if you have these then soak them until soft and de-seed, if you don’t have any just use crushed red chilli flakes.

      Serves 2

      Ingredients

      400g Chicken thighs, trimmed of any fat and cut into bite size pieces

      ½ tsp. Szechuan peppercorns

      1 tsp. sugar

      1 tbsp. light soy sauce

      1 tbsp. Chinese rice wine

      1 tsp. cornflour

      2 tbsp. vegetable oil

      1 garlic clove, crushed

      80g baby corn

      3 spring onions, sliced (save a few to garnish)

      ½-1 tsp. crushed chilli flakes to taste or 4 small dried red chilli’s

      2 tbsp. yellow bean sauce or hoi sin

      3 tbsp. water

    • Picnic Slice

      So the Easter holidays have arrived and some of you may be lucky enough to be out and about over the school holidays,  as I have two menacing boys it will be as much as possible!  This is a great recipe if you are packing up a picnic and fancy something a little different to soggy sarnies. The best thing about this is the little effort that is needed, it really is mix it all together and bake. Make it the night before and chill or eat it straight away when it’s lovely and warm.

      I have a Slica, which is great for slicing and grating but you can just use an ordinary grater instead.

      Makes 12 slices

      Ingredients

      250g cooked wholemeal pasta shapes

      2 courgettes, grated

      150g Strong cheddar cheese, grated

      100g smoked ham, chopped

      1 x tin sweetcorn, drained

      100g self- raising flour

      4 eggs, beaten

      100ml milk

      2 tbsp. vegetable oil

      6 cherry tomatoes, halved

    • King Prawn Puttanesca

      This is my fail safe recipe when I get home from a busy day at work it’s rush rush rush and the last thing you want to do is stand cooking for ages. This dinner takes less than 2o minutes from start to finish.  I make this with frozen raw king prawns when I forget to take them out of the freezer in the morning but I think the prawns have a better texture if you do defrost them first. Also if you score the top of the prawns with a knife they take up more of the sauce.  Make sure you find Kalamanta Greek olives, don’t use those horrid little black ones they taste awful, the rest of the jar will keep in the fridge for ages.

      Serves 2

      100g raw king prawns, peeled, deveined and scored along the top

      4 x anchovy fillets (reserve some oil)

      3 garlic cloves, crushed

      pinch of chilli flakes ( add more if you like it spicy)

      1 x 400g tin tomatoes

      2 tbsp. capers

      2 tbsp. pitted kalamanta olives, roughly chopped

      small handful of chopped parsley

      200g dried spaghetti

    • What an Amazing Breakfast!

      So I was in London for the weekend, I had a night away with my Hubby and he took me to The Breakfast Club for breakfast on Sunday morning for a Mothers’s Day treat. What a treat it was! Okay so you have to queue to get in but it doesn’t take long and believe me it takes that long to decide on what to eat the Menu is so good. It was actually the best breakfast I have ever had, it’s one of those places where you are seriously stuck on what to eat off the menu I could have eaten it all.

      I went for the All American, pancakes with maple syrup,  sausage, eggs, bacon and crispy potatoes…..  those potatoes were gorgeous! Okay so it’s not an everyday breakfast and I dread to think about the number of calories in it but it was sooooooo worth it.  They have a fair few cafe’s now around London, I am going to make it a mission to eat in them all. They also cater for lunch and dinner and the best bit is they do cocktails! Just waiting for another day out in London!
