    • Spiced Carrot and Lentil Soup

      As the days are turning colder, and the leaves are falling there is one thing I think of….. It’s soup time!!

      I do love a good soup, they are often dead easy to make, filling and lovely and warming. They beat the humble sandwich for lunch any day of the week. This one in particular is one of the easiest you can make;  you can rustle it up in no time and only takes a few simple ingredients that most of us will have. It’s a good way to use up those red lentils in the back of the cupboard that you never know what to do with.  I think this recipe originally came from Good Food, but it’s a regular I go back to time and time again. It’s low in fat and high fibre.

      Ingredients

      2 tsp. cumin seeds

      1 tsp. crushed chilli flakes

      650g carrots, scrubbed and grated

      140g red lentils

      1 litre vegetable stock ( I use the knorr stock pots)

      150ml milk

      chopped fresh coriander,yogurt and naan bread to serve

    • Olive Flatbread with Houmous

      Apologies to everyone, it’s been a while since I have added anything here, I have had a busy summer, eating, cocktail drinking and I even managed to squeeze some Karaoke in!

      During the week I like to make food that is fairly quick. I am a busy mum and time seems to vanish during the day and then I am left peering into the fridge for inspiration looking for something the kids can eat when they are screaming at me that they are hungry. I have slightly odd kids in that they love strong flavours, olives especially! I always have a jar of Kalamanta olives  at the back of the fridge for a Salad Nicoise or Puttanesca. I had some leftover houmous in the fridge without any form of bread to dunk in it and whipped up a batch of these bad boys, best of all they take very little effort and are very tasty. I have added a quick recipe for houmous, I am not a fan of really oily houmous so I use a little of the liquid from the chickpeas to thin the texture out, it also makes it much less calorific!

       

      for the flatbread

      125g plain flour

      1tsp. baking powder

      1/2 tsp salt

      10 pitted kalamanta olives, chopped

      1 tbsp. olive oil

      freshly ground pepper

       

      for the houmous

      1 x 400g tin of chickpeas, drained (reserve a little of the liquid)

      3 tbsp. tahini paste

      1 garlic clove, crushed

      2 tbsp. freshly squeezed lemon juice

      50ml good olive oil

      sea salt and ground pepper

      a little paprika to finish

       

      ….for the flatbread

      Mix together the flour, baking powder, salt and the chopped olives. Make a well in the centre of the mixture and add the olive oil and gradually add up to 4 tablespoons of cold water to form a soft dough.

    • Seafood Risotto with Asparagus

      I love risotto, it’s an easy dinner to make when you get in from work, it doesn’t often require many ingredients and the chances are you will have what you need in the cupboard. I always keep a bag of frozen seafood/prawns in the freezer they come in so handy; the raw types can be added to dishes straight from the freezer without the need for defrosting first.

       

      Serves 2-3

      What you will need….

      25g butter

      1 onion, peeled and finely chopped

      splash of white wine (optional)

      175g risotto rice

      1.2 litres Hot vegetable stock  ( I use Knorr )

      1/2 Frozen seafood, (Tesco frozen seafood risotto mix is perfect) or defrost some cooked seafood

      1 small pack of asparagus tips

      1/2 lemon, zested and juiced

      1 tbsp chopped parsley to serve

    • Lemon Drizzle Cake

      I love the moist cake which comes from the drizzle you pour over the cake after it has come out of the oven and this one has a real lemony tang to it. This is one my friends favourite cakes and as she is not feeling great this week, I thought I would make it to cheer her up.

       

      What you will need….

      225g unsalted butter, softened

      225g golden caster sugar

      4 egg, lightly beaten

      2 lemons, zested

      225g self raising flour, sifted

       

      for the drizzle….

      juice of 2 lemons

      80g granulated sugar

       

      How to make it…..

      Heat the oven to 180⁰C/fan 160⁰C/gas mark 4 and butter and  line a 2lb loaf tin with baking parchment.

      Beat the butter and sugar in a medium sized bowl until light and fluffy. Add the eggs a little at a time until fully incorporated.

      Fold in the sifted flour and add the lemon zest, gently mix until all the flour has been mixed in.

      Spoon the mixture into the loaf tin and level off slightly and bake in the oven for 45-50 minutes.

      While the cake  is baking mix the ingredients together for the drizzle.

      To test the cake is ready insert a skewer, if it comes out clean it is ready, if not leave it for 5 more minutes, remove from the oven and leave the cake to rest.

      While it is still warm use the skewer and prick the surface of the cake all over, then pour over the drizzle. The drizzle mixture will sink in and the sugar will remain on the top as a lovely crispy coating.

      Leave to cool completely before lifting out and slicing.

    • Rocky Road Popcorn Boulders

      I have been testing out a great popcorn maker at work this week, the type that uses hot air to pop the corn. As it is half term holidays for the kids next week and it looks like rain 😦  I thought these might go down well with the kids, or even for a birthday party. If you don’t have a machine to pop corn, you can pop the corn in a large saucepan with a drizzle of oil in the base of the pan.

      These are fab, you can pretty much use any of your favourite bits in them, these ones  have raisins, marshmallows and chocolate chips. But You could use chopped nuts or pieces of dried apricot instead or even small chucks of fudge. Get the kids involved rolling them up, leave the mixture to cool slightly first so they don’t burn their fingers!

      What you will need…

      1 measuring cup of popping corn (approx 100g)
      150g mini marshmallows
      50g chocolate chips
      50g raisins

      a little melted chocolate for drizzling (optional)
      a little oil

    • Spiced Lamb with Coconut, Ginger and Lime

      This dish is wonderfully fragrant and uses very little ingredients to make a lovely Thai inspired dish. It is crucial to buy the right cut of lamb, anything that takes too long to cook will be chewy and tough, so buy leg steaks or neck fillet for this recipe. Also the Thai curry paste is important look for a good Thai brand or you could even make your own and freeze the remainder for another time. I used green beans for this as I wanted something with a bit of bite but if you don’t like them, replace them with something crunchy you do like.

      Serves 2-3

      Ingredients

      1 tbsp. vegetable oil

      400g Lean lamb leg steaks, cut into bite size pieces

      1 garlic clove, crushed

      1” piece of root ginger, peeled and cut into thin matchsticks

      2 tbsp. Thai Curry Paste, (Mae Ploy is an excellent brand)

      1 lime, zest and juice

      1 x 400g tin of Coconut Milk

      75g fine green beans, halved

      1 tbsp. chopped coriander

      To serve: Thai Jasmine Rice

    • Korean Seafood Stir-fry

      I came across this wonderful Korean paste called Gochujang  which translates to “Hot Pepper Paste” in my local Asian food store, I bought it and couldn’t find anything to make with it so I searched for some recipes and I came up with this one. As I have a slight obsession with seafood I added prawns and squid,  but it’s  not only good with  seafood it adds a depth of flavour to any meat stir-fry. Have a search for it you won’t be  disappointed, the taste is  hot and spicy but with an amazing smoky flavour as well, and the best part is it takes very little effort to create a delicious meal in less than 20 minutes, and I just love fast cooking!

      Serves 2

      Ingredients

      150g raw king prawns

      150g squid,

      1 tbsp. vegetable oil

      1 onion, peeled,  halved and sliced

      1 carrot, peeled and cut on the diagonal

      4 spring onions, sliced

      1 heaped tsp. sugar

      1 tbsp. oyster sauce

      2 tbsp. Korean gochujang paste

      ½ tsp. chilli flakes (optional)

      3 tbsp. water

      1 tsp. sesame seeds

      Steamed Rice to serve

      So I wanted to make something a little bit fun for the kids at Easter and I came up with these, the are great fun to do and my kids are now having a discussion which one to eat first! I made my cake pops in my MPL Home Cake Pop Maker which I love as it takes all the effort out of making them, they literally take 4 minutes to bake!

       

      Ingredients

       

      125g softened butter

      125g caster sugar

      2 eggs, lightly beaten

      125g self raising flour

      1-2tbsp. milk

      Cake pop sticks

      White candy buttons (PME are good)

      Yellow candy buttons

      Sprinkles for beaks, wings and bunny noses

      Ready made icing for ears

      Food colouring for eyes and mouth

      Icing sugar

    • Spicy Szechuan Chilli Chicken

      I absolutely love Asian cooking and trawl the Asian supermarkets for weird and wonderful ingredients; one of the best I have come across is  called Raan Thai, and they offer a fantastic delivery service!

      This recipe is from the Szechuan region of china and is often spicier than any other region, they typically use small dried chillies, if you have these then soak them until soft and de-seed, if you don’t have any just use crushed red chilli flakes.

      Serves 2

      Ingredients

      400g Chicken thighs, trimmed of any fat and cut into bite size pieces

      ½ tsp. Szechuan peppercorns

      1 tsp. sugar

      1 tbsp. light soy sauce

      1 tbsp. Chinese rice wine

      1 tsp. cornflour

      2 tbsp. vegetable oil

      1 garlic clove, crushed

      80g baby corn

      3 spring onions, sliced (save a few to garnish)

      ½-1 tsp. crushed chilli flakes to taste or 4 small dried red chilli’s

      2 tbsp. yellow bean sauce or hoi sin

      3 tbsp. water
