    • Pavlova with Spiced Figs and Ginger Cream

      I am now officially feeling festive my local town had there Christmas Gala on Friday night, so I took the kids along and am a little poorer as a consequence! Candy floss, hot roasted chestnuts, warm mince pies and a number of trashy rides! I did however manage a cheeky mulled wine and the kids even got to stroke the reindeer….Happy days.

      As we got the Christmas tree ready to decorate yesterday afternoon (yes I know its early but I am away next weekend) we had an epic fail the Christmas lights no longer seem to work, so it’s a dash to the shops after work tonight as I cannot bear to look at the naked tree standing in the corner!!

      We did however have a terrific pavlova over the weekend and I think that it would make a fantastic sweet treat over the festive period…. who doesn’t love chewy meringue?? This would be great for anybody who is not a fan of Christmas pud, it has sweet spiced  figs and delicious warming ginger cream and would makes a great centrepiece.

      Pavlova

      4 large free range eggs
      200g golden caster sugar
      1 tbsp. cornflour
      Pinch of Sea salt

       Ginger cream

      400ml double cream
      125g mascarpone
      1 tbsp. stem ginger
      1 ball of stem ginger, finely chopped

      For the spiced figs

      8 figs
      1 knob of butter
      1 tbsp. demerara sugar
      ½ tsp. ground cinnamon
      2 tbsp. stem ginger syrup
      2 star anise
      ½ orange, zest and juice

      to serve- toasted flaked almonds

      Method

      1.Start by making the meringue, separate the egg whites into a large bowl and whisk until they form stiff peaks, then add the sugar a little at a time until it is completely incorporated, add the salt and cornflour and continue to whisk until the mixture is glossy.

    • Seafood Risotto with Asparagus

      I love risotto, it’s an easy dinner to make when you get in from work, it doesn’t often require many ingredients and the chances are you will have what you need in the cupboard. I always keep a bag of frozen seafood/prawns in the freezer they come in so handy; the raw types can be added to dishes straight from the freezer without the need for defrosting first.

       

      Serves 2-3

      What you will need….

      25g butter

      1 onion, peeled and finely chopped

      splash of white wine (optional)

      175g risotto rice

      1.2 litres Hot vegetable stock  ( I use Knorr )

      1/2 Frozen seafood, (Tesco frozen seafood risotto mix is perfect) or defrost some cooked seafood

      1 small pack of asparagus tips

      1/2 lemon, zested and juiced

      1 tbsp chopped parsley to serve

    • Lemon Drizzle Cake

      I love the moist cake which comes from the drizzle you pour over the cake after it has come out of the oven and this one has a real lemony tang to it. This is one my friends favourite cakes and as she is not feeling great this week, I thought I would make it to cheer her up.

       

      What you will need….

      225g unsalted butter, softened

      225g golden caster sugar

      4 egg, lightly beaten

      2 lemons, zested

      225g self raising flour, sifted

       

      for the drizzle….

      juice of 2 lemons

      80g granulated sugar

       

      How to make it…..

      Heat the oven to 180⁰C/fan 160⁰C/gas mark 4 and butter and  line a 2lb loaf tin with baking parchment.

      Beat the butter and sugar in a medium sized bowl until light and fluffy. Add the eggs a little at a time until fully incorporated.

      Fold in the sifted flour and add the lemon zest, gently mix until all the flour has been mixed in.

      Spoon the mixture into the loaf tin and level off slightly and bake in the oven for 45-50 minutes.

      While the cake  is baking mix the ingredients together for the drizzle.

      To test the cake is ready insert a skewer, if it comes out clean it is ready, if not leave it for 5 more minutes, remove from the oven and leave the cake to rest.

      While it is still warm use the skewer and prick the surface of the cake all over, then pour over the drizzle. The drizzle mixture will sink in and the sugar will remain on the top as a lovely crispy coating.

      Leave to cool completely before lifting out and slicing.

      So I wanted to make something a little bit fun for the kids at Easter and I came up with these, the are great fun to do and my kids are now having a discussion which one to eat first! I made my cake pops in my MPL Home Cake Pop Maker which I love as it takes all the effort out of making them, they literally take 4 minutes to bake!

       

      Ingredients

       

      125g softened butter

      125g caster sugar

      2 eggs, lightly beaten

      125g self raising flour

      1-2tbsp. milk

      Cake pop sticks

      White candy buttons (PME are good)

      Yellow candy buttons

      Sprinkles for beaks, wings and bunny noses

      Ready made icing for ears

      Food colouring for eyes and mouth

      Icing sugar

      Everybody loves a Cream Tea…

      So as I was out and about yesterday I came across the most amazing scones, so I decided to come home and make some.

      They were delish even if I do say so myself. The secret to making really good scones is not to handle the dough too much, all you need to do is literally bring the dough together and roll it out, this way they will be incredibly light in texture.

      Ingredients

      500g self raising flour

      1 tsp. baking powder

      ½ tsp. salt

      25g caster sugar, optional

      75g cold butter, chopped

      300ml buttermilk

      3 tbsp. milk

      1 egg, beaten for egg wash

      Jam ( your fave)

      Clotted cream

      How to make them….

      Sift the flour, baking powder, salt and sugar into a bowl and mix together. Add the butter and use your fingers to rub the butter and flour together like you would do for pastry until you get fine crumbs. Add the egg, buttermilk and milk together and use a knife to bring the dough together. Empty out onto a floured work surface and gently bring the dough together.

      Roll it out to approximately 3cm thick and use a  6cm fluted cutter, stamp out 10 scones from the mix making sure you dip the cutter in a little flour before you stamp this way it will not stick. Also don’t twist the cutter, if you do your scones will not rise properly. You may find you can make another two with the left over dough. Obviously if you want monstrously big scones just use a bigger cutter!
