    • Skinny Lemon and Blueberry Pancakes

      These pancakes are lower in fat and are a great source of natural protein. By using a blender, these take seconds to whip up for a scrumptious breakfast treat. They use cooked quinoa they are lower in fat and high in protein and are gluten free.

      Serves 2-3

      Makes 12 pancakes

      150g cooked and cooled quinoa
      50g buckwheat flour
      1.5 tsp baking powder
      ¼ tsp salt
      3 large egg whites
      100ml low fat Greek yogurt
      2 tbsp milk
      1 tbsp honey/agave syrup
      1 tsp vanilla
      1 tbsp grated lemon zest
      100g blueberries
      Spray oil

      1. Place all the ingredients except the blueberries into a blending jug and blend until smooth. Add the blueberries into the batter and mix well. Heat a frying pan/ griddle and  spray with a little oil.
      2. Pour the batter into 4 rounds onto the hotplate and cook until the batter bubbles, flip over and continue cooking until springy and cooked through. Repeat until the mixture is used up.
      3. Serve in a stack,  drizzled with a little honey or agave syrup.

    • Pot Roast Chicken with Rosemary, Lemon and Garlic

      This is a recipe for an Electric Pressure Cooker, these units are fabulous, they produce your favourite meals in a fraction of the time, this is one pot cooking at it’s best. This recipe cooks a whole chicken in 30 minutes, this means that you can have a mid week roast in no time at all!

      There is a brilliant one currently on sale in Aldi.

      Serves 4-6 people depending on how hungry you are!

      Ingredients

      1 tbsp finely chopped fresh rosemary, plus a few extra sprigs
      30g soft butter
      1 lemon, zested
      2-3 garlic cloves
      1 tsp sea salt
      freshly ground black pepper
      1 medium size chicken (approx 1.5kg)
      1 small glass of dry white wine or chicken stock
      2 onions, peeled and thickly sliced

      Method

      1. Start by making the herb butter.  Pound the chopped rosemary, butter, lemon zest, garlic, salt and a good grind of black pepper in a mortar and pestle until it is smooth.

    • Lemon Drizzle Cake

      I love the moist cake which comes from the drizzle you pour over the cake after it has come out of the oven and this one has a real lemony tang to it. This is one my friends favourite cakes and as she is not feeling great this week, I thought I would make it to cheer her up.

       

      What you will need….

      225g unsalted butter, softened

      225g golden caster sugar

      4 egg, lightly beaten

      2 lemons, zested

      225g self raising flour, sifted

       

      for the drizzle….

      juice of 2 lemons

      80g granulated sugar

       

      How to make it…..

      Heat the oven to 180⁰C/fan 160⁰C/gas mark 4 and butter and  line a 2lb loaf tin with baking parchment.

      Beat the butter and sugar in a medium sized bowl until light and fluffy. Add the eggs a little at a time until fully incorporated.

      Fold in the sifted flour and add the lemon zest, gently mix until all the flour has been mixed in.

      Spoon the mixture into the loaf tin and level off slightly and bake in the oven for 45-50 minutes.

      While the cake  is baking mix the ingredients together for the drizzle.

      To test the cake is ready insert a skewer, if it comes out clean it is ready, if not leave it for 5 more minutes, remove from the oven and leave the cake to rest.

      While it is still warm use the skewer and prick the surface of the cake all over, then pour over the drizzle. The drizzle mixture will sink in and the sugar will remain on the top as a lovely crispy coating.

      Leave to cool completely before lifting out and slicing.
