    • South Indian Vegetable Curry with Paneer

      This curry is lightly spiced and lovely and fragrant, the addition of Paneer gives the curry more body and is easily available in most supermarkets and perfect for those meat free days. Serve it with warm Naan bread to soak up the delicious sauce.

      This was cooked in the Multicooka which is available from Lakeland, it is a multifunctional one pot cooker, it has 12 simple to use programmes and even has an auto-stir function for hands free cooking which is great for Risotto.

      Serves 4-5

      Ingredients

      2 tbsp. vegetable oil
      1 large onion sliced
      2 tsp peeled and grated ginger
      2 garlic cloves, crushed
      2 tsp black mustard seeds
      12-15 curry leaves (fresh if possible)
      1 tsp ground cumin
      2 tsp garam masala
      1 tsp. turmeric
      ¼ tsp cracked black pepper
      2 finger green chilli, finely chopped
      400ml coconut milk
      150ml vegetable stock
      2 carrots, peeled cut into batons
      350g cauliflower, broken into florets
      2 courgettes, chopped into chunky pieces
      300g sweet potato, peeled and chopped into small chunks
      150g green beans, trimmed and sliced in half
      227g block Paneer cheese, cubed into bite size pieces
      100g baby spinach leaves
      Small bunch coriander, chopped

      Method.

      1. Add the stirring paddle to the unit and add the oil, select the SAUTE function add the sliced onion and fry until softened but not coloured, add the ginger, garlic, spices and chilli and fry until fragrant.

    • Hearty Minestrone with Herby Croutons

      It is taking a while but the cold weather is coming and I love it when you can finally ditch the salad and start making warming soups. This soup is comforting and extremely filling, it is jam packed with lots of wonderful veggies to load up on your 5 a day.

      Serves 4-5

      Ingredients

      1 tsp oil
      100g pancetta, chopped
      1 large onion, finely chopped
      2 garlic cloves, peeled and crushed
      2 celery sticks, finely chopped
      2 carrots, peeled and chopped
      1 medium potato, peeled and chopped
      1 x 400g tin tomatoes
      1.2 litres vegetable stock
      1 x 400g tin Borlotti beans, drained
      70g spaghetti, broken into small pieces
      4 outer leaves of savoy cabbage, shredded
      Small bunch of basil, chopped
      Salt and pepper

      For the croutons
      3 slices of crusty white bread
      2 tbsp. olive oil
      1 tsp sea salt
      1 tsp dried basil
      ½ tsp dried oregano
      Freshly ground black pepper

      Method

      To make the croutons, slice the bread (including the crusts) into bite sized cubes and place them in a large bowl, drizzle the oil over the bread and stir to coat. Add the salt, basil and oregano and tumble the cubes around to coat them in the herbs. Give the bread a coating of freshly ground pepper. Place them on a baking tray and pop them in the oven at 180⁰C/ Gas 4 for 10-15 minutes until golden and crisp. Remove them and allow the croutons to cool.

    • Homemade Boston Style ‘Baked’ Beans

      Why would you make your own ‘Baked Beans’….. because they are delicious! They are sweet, sticky  and with the looming Autumnal weather they are perfect with Sausages and Mash. Make extra and freeze them for bonfire night!

      Serves 4-6

      500g dried haricot beans, picked over for any broken beans
      2 tsp salt
      1 tbsp oil
      2 litres water

      For the sauce

      1/2 tbsp oil
      180g smoked bacon lardons
      1 large onion, peeled and chopped
      700ml water
      130g tomato ketchup
      100g molasses or black treacle
      40g brown sugar
      2 tbsp wholegrain mustard
      1 tbsp balsamic vinegar
      1 tsp dry mustard
      1/2 tsp chilli powder
      1/2 tsp salt
      1/4 tsp ground black pepper

      To speed up the whole process this dish is made in the pressure cooker, however this is not a necessity and can be made in the oven; to do this the beans will need to be soaked for at least 8 hours in cold water before use.

      Method

      1. Place the dried beans, salt, oil and 2 litres of water into the pressure cooker and secure the lid. Cook under pressure for 3 minutes, then release the pressure immediately, taking care as beans can foam during cooking. Drain the beans and set aside for a minute.

    • Seafood Risotto with Asparagus

      I love risotto, it’s an easy dinner to make when you get in from work, it doesn’t often require many ingredients and the chances are you will have what you need in the cupboard. I always keep a bag of frozen seafood/prawns in the freezer they come in so handy; the raw types can be added to dishes straight from the freezer without the need for defrosting first.

       

      Serves 2-3

      What you will need….

      25g butter

      1 onion, peeled and finely chopped

      splash of white wine (optional)

      175g risotto rice

      1.2 litres Hot vegetable stock  ( I use Knorr )

      1/2 Frozen seafood, (Tesco frozen seafood risotto mix is perfect) or defrost some cooked seafood

      1 small pack of asparagus tips

      1/2 lemon, zested and juiced

      1 tbsp chopped parsley to serve

    • Korean Seafood Stir-fry

      I came across this wonderful Korean paste called Gochujang  which translates to “Hot Pepper Paste” in my local Asian food store, I bought it and couldn’t find anything to make with it so I searched for some recipes and I came up with this one. As I have a slight obsession with seafood I added prawns and squid,  but it’s  not only good with  seafood it adds a depth of flavour to any meat stir-fry. Have a search for it you won’t be  disappointed, the taste is  hot and spicy but with an amazing smoky flavour as well, and the best part is it takes very little effort to create a delicious meal in less than 20 minutes, and I just love fast cooking!

      Serves 2

      Ingredients

      150g raw king prawns

      150g squid,

      1 tbsp. vegetable oil

      1 onion, peeled,  halved and sliced

      1 carrot, peeled and cut on the diagonal

      4 spring onions, sliced

      1 heaped tsp. sugar

      1 tbsp. oyster sauce

      2 tbsp. Korean gochujang paste

      ½ tsp. chilli flakes (optional)

      3 tbsp. water

      1 tsp. sesame seeds

      Steamed Rice to serve

      Hi I’m Gill and this is my blog, I love food, cocktails and kararoke! I work as a Home Economist; I am married and have two young boys.


      I currently live in Hertfordshire but I am northerner and originally from Merseyside and am what is known as a Plastic Scouser!
