    • Thai Broth with Prawns and Noodles

      This is a delicious spicy clear broth packed with oriental flavours, if you have over indulged at the weekend and had one to many cocktails this is a great way to get back on track!

      Serves 4-5

      Ingredients

      1.2 litres good quality chicken stock
      2cm piece of fresh ginger, peeled and chopped into match sticks
      2 garlic cloves, peeled and crushed
      1 lemongrass stalk sliced down the middle and bashed to release flavour
      1 green finger chilli, sliced
      1 lime, zested and juiced
      3 tbsp. Chinese rice wine or sherry
      1.5 tbsp. fish sauce
      1 tsp Demerara sugar
      250g fresh king prawns
      1 red chilli, sliced finely
      3 spring onions, white and green parts sliced
      1 nest of rice vermicelli noodles
      150g button mushrooms, wiped and sliced in half
      Small bunch of fresh coriander, chopped

      Method

      Place the chicken stock, ginger, garlic, lemongrass, green chilli, lime zest and juice, rice wine, fish sauce and sugar into a medium-sized saucepan and bring to the boil, reduce the heat down slightly and bubble for 5 minutes, this will allow all the flavours to mingle.

    • Korean Seafood Stir-fry

      I came across this wonderful Korean paste called Gochujang  which translates to “Hot Pepper Paste” in my local Asian food store, I bought it and couldn’t find anything to make with it so I searched for some recipes and I came up with this one. As I have a slight obsession with seafood I added prawns and squid,  but it’s  not only good with  seafood it adds a depth of flavour to any meat stir-fry. Have a search for it you won’t be  disappointed, the taste is  hot and spicy but with an amazing smoky flavour as well, and the best part is it takes very little effort to create a delicious meal in less than 20 minutes, and I just love fast cooking!

      Serves 2

      Ingredients

      150g raw king prawns

      150g squid,

      1 tbsp. vegetable oil

      1 onion, peeled,  halved and sliced

      1 carrot, peeled and cut on the diagonal

      4 spring onions, sliced

      1 heaped tsp. sugar

      1 tbsp. oyster sauce

      2 tbsp. Korean gochujang paste

      ½ tsp. chilli flakes (optional)

      3 tbsp. water

      1 tsp. sesame seeds

      Steamed Rice to serve

    • Spicy Szechuan Chilli Chicken

      I absolutely love Asian cooking and trawl the Asian supermarkets for weird and wonderful ingredients; one of the best I have come across is  called Raan Thai, and they offer a fantastic delivery service!

      This recipe is from the Szechuan region of china and is often spicier than any other region, they typically use small dried chillies, if you have these then soak them until soft and de-seed, if you don’t have any just use crushed red chilli flakes.

      Serves 2

      Ingredients

      400g Chicken thighs, trimmed of any fat and cut into bite size pieces

      ½ tsp. Szechuan peppercorns

      1 tsp. sugar

      1 tbsp. light soy sauce

      1 tbsp. Chinese rice wine

      1 tsp. cornflour

      2 tbsp. vegetable oil

      1 garlic clove, crushed

      80g baby corn

      3 spring onions, sliced (save a few to garnish)

      ½-1 tsp. crushed chilli flakes to taste or 4 small dried red chilli’s

      2 tbsp. yellow bean sauce or hoi sin

      3 tbsp. water
